Those are both gorgeous rifles. Great engraving on both. Your grandfather had good taste in guns! I think I would not mess with the stock on the first one. It really does not look bad at all. The Model 8 should keep its original stock, but send it to a qualified stock restoration guy. They can work miricles.

FWIW, I inherited one of my grandfathers guns when I was in my 20's. I refinished it using the best products I could find at Walmart. I have regretted it every since.
Every ding or wear point on that rifle has a story behind it that gives the gun its character, much like the lines on your grandfathers face. I dont know how old you are now, but I would wager that as you age you will appreciate the value of that character more and more. If I were in your shoes, I would continue to use and maintain it in the same way your grandfather did, or would in your place, in his honor. I would keep it in a fireproof safe and not give the $ value or insurance another thought.
